Most visitors see only the north and south of Cappadocia, and the famous stops can get crowded. This tour goes the other way. You start in Mustafapasa, once the Greek village of Sinasos, then visit Keslik, a monastery set in a green valley with painted cave churches and the largest rock-cut dining hall in the region. Next is Sobesos, a Roman town only recently excavated, with its mosaics and bath house. In Soganli you walk up one side of a quiet valley past cave churches and come back down the other, then have lunch in the village. The last stop, on the way back, is Derinkuyu, eight levels deep. Because the tour is private, the route and the timings are yours to change.

Good to know before you book

• The Soganli walk is on uneven paths with some climbing to reach the churches. Wear comfortable shoes.
• Derinkuyu involves narrow, low passages and steep stairs. If you are uncomfortable in confined spaces, tell your guide and you can wait above ground.
• Soganli is about an hour's drive from central Cappadocia, so part of the day is spent on the road.
